Raspberry Shrub from Homemade Root Beer, Soda, and Pop by Stephen Cresswell
2 cups of raspberries (fresh or frozen)
1/2 cup white wine vinegar
2 cups sugar
Place raspberries in small pot. Cover with vinegar and mash with a potato masher (or blend with stick blender). Heat on low, adding sugar gradually until all has been dissolved. Bring to a boil then remove from heat.
Strain into a clean vessel (I used a Ball Jar). Allow to cool. Refrigerate.
To make a glass of drink: stir 1/4 cup of mixture into a glass of water and add ice. Enjoy!
